With the new year approaching, I’m contemplating anotherWhole30 challenge. I remember when I did my first one, I didn’t talk about it much because frankly, I was a little nervous I wouldn’t be able to complete it. But with God’s grace, some knowledgeable friends, and lots of awesome tips I found online, I was able to complete it with relative ease. So now I am excited to do it again. Why do it again?

Anyway . . . back to my story.

The time around Thanksgiving and Christmas is the hardest time of year to stay on plan for me. And I end up feeling horrible with joint pain, fatigue, and increased headaches. The Whole30 challenge has worked well for me in the past to detox my system of all the bad stuff and jump start me back into feeling better from my autoimmune symptoms.

100 Whole30 Paleo Recipes for the Instant Pot (5)I know that going back to do another 30 days (at least — I’m considering doing it for 90 days) and then reintroducing foods properly, will make a huge difference for me.

Something that I discovered the first time I did the Whole30 challenge that made a huge difference for me (and my family) was my Instant Pot. One of the things I find most challenging is making sure I cook dinner each night on plan for me, and with acceptable foods for my guys. Neither my husband or son are interested in doing the Whole30 challenge with me, but neither mind if I cooked a compliant meal for dinner each night. I know I can handle a little boredom in my meals, but I didn’t want to force them to eat salmon cakes and salad for dinner each night.

I had to make sure that I cooked delicious meals that satisfied them, while remaining Whole30 compliant, and easy, for me. Let me confess something to you right now. I’m not a great cook. Not even close. And I don’t really enjoy cooking either. So the last thing I wanted to do was spend long hours in the kitchen, cooking complicated meals.

Enter the Instant Pot.Are you familiar?

My husband gave me an Instant Pot for Christmas a couple of years ago. I’ll admit that at first, it intimidated me a little. I didn’t even open if for months after he gave it to me. But a few quick online tutorials, and a great Facebook group or two, and soon I was discovering the tremendous ease of use, and great convenience of this kitchen appliance.

What is an Instant Pot?

An Instant Pot is a smart electric pressure cooker. It’s safe, convenient and dependable, created for fast-paced, healthy family lifestyles. It is a 7-in-1 multi-functional cooker: pressure cooker, slow cooker, rice cooker, saute-er, yogurt maker, steamer, and warmer. Instant Pot may just become your new best friend. It’s certainly has become mine.

After scouring the internet, I’m excited to say that I have found 100 recipes that all look really delicious. I have triedquite a few of them, but I can’t wait to try them all! Since, for the most part, we all fix our own breakfast and lunch, I’m focusing primarily on the dinner menu.
