Does anyone else ever go into tuna moods? We are in that mood. Now that it is getting warmer it just has us just craving cold tuna salad. Well, if you are in a tuna mood too then these avocado tuna salad are right up your alley today.

We love this Low Carb Tuna Vegetable Salad but think I’ve got to admit… I love this avocado tuna salad more.

Mainly because, I love avocado. ?

Yeah don’t even get me started on the guacamole. We are guacamole obsessed in this family. Low Carb Taco Salads are NOT proper taco salads without guacamole.

So while our family might not be the biggest tuna salad fans all the time we’ve come to a conclusion, stuff into avocado.. everything is right in the world.

Especially when you see the carb count on these babies! We actually think we fell in love with this recipe even more when we calculated the carb count.

HOW MANY NET CARBS IN OUR Avocado Tuna Salad

2 Net Carbs per stuffed avocado.ÂÂA stuffed avocado is one half of the sliced avocado and about 1/2 cup of our homemade tuna salad.

Am I the only one that gets extremely full when eating avocado? Well, for me eating half an avocado with tuna salad is almost TOO much for me.. I’m SO FULL and trying to finish the last couple bites.. so for 2 net carbs and that feeling. This seriously is healthy lunch perfection.

HOW TO KEEP AN AVOCADO FRESH IF NOT USING ALL OF IT??

Our avocado storing tip that I’ve been doing for years that really works.

No one likes a browning avocado.. hence why most people try to devour an avocado immediately upon cutting it.

Well, when you cut an avocado in half and pull it apart there is a side with the pit and another side without it. Eat the side without the pit for lunch and KEEP the pit inside the other side for tomorrow.

Simply take some cling wrap and press it over the avocado pit and avocado flesh to trap in the freshness andÂeat within 24 hours.Â

Sometimes depending on how ripe the avocado is to begin with it will get a bit brown in places but nothing like it would if you left it not covered and without the pit. I’ve found keeping the pit inside the uneaten side of the avocado key. You can also add a bit or lime or lemon but I find that extra step doesn’t prevent the browning enough that it is worth it.

Ingredients

  • 1 (6.4oz) canned tuna fish , drained
  • 1/3 cup mayonnaise (can sub for plain yogurt if desired)
  • 2 Tablespoons yellow mustard
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon garlic powder
  • 1/4 cup celery , diced
  • 1/4 teaspoon crushed red pepper flakes
  • 2 avocados , sliced and pitted

Instructions

  • In a small bowl mix together tuna fish, mayonnaise, mustard, onion powder, garlic powder, celery and red pepper flakes.

  • Spoon 1/2 cup of tuna salad into center of each avocado. Serve immediately.
