I haven’t had them come out too crunchy, but if you find they do, you can simply return the lid to the pot and cook them for extra time.Since the Instant Pot is already hot, it won’t take as long to pressurize and cook for more time.

Another issue that causes crunchy beans is that the age of the beans matters. If the dried beans have been sitting around for a while, they may actually never cook up tender enough or may need to cook for an extended period of time in order to be fully cooked.

If you know you are cooking with older beans, I recommend using the overnight soak method I mentioned in the question above or simply increasing the cooking time by 5-10 minutes.
