No Bake Brownie Batter Cheesecake Recipe + VIDEO (2)

Friends, I am so excited to share this with you! This incredible no bake cheesecake is from my friend Julianne’s new cookbook No Bake Treats!

I know you know I have big, BIG love for no bake cheesecakes and just cheesecake in general.

Some of my other favorites here are:

No Bake White Chocolate Raspberry Cheesecake

Real Deal No Bake Lemon Cheesecake

And this The Best Vanilla Cheesecake — no water bath required!

This No Bake Peanut Butter Marshmallow Square Cheesecake went absolutely nuts around Easter — it’s a little over the top, but if you love the classic marshmallow squares you’re in for a real treat!

I couldn’t resist adding another to my collection from Julianne’s book.

She is the no bake dessert queen and shares her delicious treats on her site Beyond Frosting. If you’ve never heard of her, you need to check her out (link above!) — some seriously amazing desserts!

I can’t say that adding brownie mix to a cheesecake would have ever crossed my mind, but I’m glad it crossed Julianne’s because the flavor in this cheesecake is incredible! It’s so rich and chocolatey without being as heavy as a baked cheesecake.

This cheesecake is for true chocolate lovers only though!

If you’re not one who is prone to lick that brownie batter spatula, then this might not be the cheesecake for you 😉

Now you need to know, this cheesecake is one for sharing!

I would definitely recommend making it when you have a few friends to share with (or, hey — slice it up and freeze individually for when the craving hits!). It’s quite sweet and soooo chocolatey, but it is truly the ultimate cheesecake for chocolate lovers.

Not that I know any of those 😉

Some people have asked about using regular cake mix instead of brownie mix. I haven’t tried it, but I don’t think you would get quite the same intense chocolate flavor. If that’s okay with you, then give it a try!

I will also add that for the recipe, one box of brownie mix should be just right.

Tips for Making this No Bake Brownie Batter Cheesecake:

  • You’re going to want a really great Springform pan if you don’t already have one — cheap ones can start to leak and that’s not something you want!
  • I’ve included the recipe as it is in the cookbook, but I couldn’t get my hands on any whipping cream before I made it (I tried!) so I substituted 1% milk and it worked just fine!

Here’s a look at the cookbook! No Bake Treats from Julianne Bayer 🙂

Watch the recipe video down below and see how easy it is to make!

Is it safe to eat raw brownie mix?

It is not recommended to consume raw flour, although I’m going to leave that choice up to you to make. I’ve eaten my share of this Brownie Batter Cheesecake, and I’m still holding up 😉

If you are concerned about the fact that the brownie mix contains raw flour, feel free to heat treat your brownie mix. Some people do this in the oven, be spreading it on a pan and baking it, and I’ve seen others simply microwave the dry brownie mix for a couple of minutes on high.

If it’s a concern for you, feel free to investigate further and make the best choice for you.

Otherwise, you may want to make one of the no-bake cheesecakes listed above or this Chocolate Cheesecake.

Ingredients

FOR THE CRUST

  • 2 1/2 cups chocolate baking crumbs 225g
  • 6 tbsp unsalted butter

FOR THE FILLING

  • 24 oz cream cheese, softened (I use light) 3 packages
  • 1/2 cup granulated sugar 96g
  • 3 tbsp heavy whipping cream
  • 2 tsp vanilla extract
  • 3 cups brownie mix (dry) 375g

FOR THE TOPPING

  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar

FOR THE GLAZE

  • 3 tbsp brownie mix (dry) 23g
  • 3 tsp vegetable oil
  • 4 tbsp heavy whipping cream

Instructions

  • FOR THE CRUST: Prepare a 9-inch (23-cm) springform pan by lightly greasing the edges of the pan with cooking spray, and then wiping gently with a paper towel.

  • In a microwave-safe bowl, microwave the butter for 45 to 60 seconds until the butter is melted. Stirthe melted butter into the cookie crumbs until there are no dry crumbs left. Pour the crumbs into your springform pan and press firmly into the bottom and up the sides of your springform pan to create a thick crust.

  • FOR THE FILLING: Beat the cream cheese on medium-high speed for 2 to 3 minutes until it’s light and fluffy.

  • Slowly add the sugar into the cream cheese while beating the mixture. Next, add the heavy whipping cream and vanilla extract. Beat until the filling is smooth and creamy, scraping down the bowl as needed.

  • Slowly add the dry brownie mix, beating on medium speed until the dry mix is completely blended into the cream cheese.

  • Pour the filling into the prepared crust and spread evenly. Cover and refrigerate for 4 hours until the filling is firm.

  • FOR THE TOPPINGPlace the mixing bowl and whisk attachment in the freezer for 5 to 10 minutes to chill.

  • Pour the heavy whipping cream into the chilled bowl and use an electric mixer to beat the heavy cream on medium-high speed until the cream gets bubbly. Slowly add the powdered sugar and continue beating on high speed until stiff peaks form.

  • Remove the springform pan edge and spread whipped cream over cheesecake, or pipe swirls around the edges (the photos show both ways)

  • FOR THE GLAZE: In a small bowl, combine dry brownie mix, vegetable oil and heavy whipping cream or milk. Whisk until the mixture is smooth. For a thinner mixture, you can add additional heavy whipping cream. Drizzle over the cheesecake.

FAQs

How do you know when a no-bake cheesecake is set? ›

The filling needs proper chilling, a minimum of four hours but preferably overnight, to set into sliceable sections. Freezing the cheesecake results in a too-hard-to-enjoy crust and filling. Try this: The cheesecake should be shiny and firm to the touch when set.

Why is my no-bake cheesecake so runny? ›

The primary reason a no-bake cheesecake is too runny or doesn't set up properly is generally the temperature of the ingredients. If your cream cheese is too warm, the mixture will be too soft and will never set up properly.

What is no-bake cheesecake filling made of? ›

For the Filling: Combine cream cheese, sugar, lemon juice, vanilla, and salt in the bowl of a stand mixer fitted with a paddle attachment.

How do you make a no-bake cheesecake set faster? ›

After the chill time, if your cheesecake still isn't firm enough, you can freeze it to help it set up. Be careful not to freeze it too long unwrapped though; it can cause the texture to become gritty.

How do you fix a no bake cheesecake that didn't set? ›

You can fix a runny cheesecake mixture the same as the others – with a setting agent – or freezing to make an ice cream mixture. Sometimes the cheesecake can be too thin if a chocolate has melted the mixture for example – and this is also solved this way.

How do you thicken a no bake cheesecake filling? ›

Confectioners' Sugar: A smidge of confectioners' sugar thickens the filling, while also keeping it light. I tested with flour and cornstarch and both left a chalky aftertaste. I recommend sticking with confectioners' sugar. Sour Cream: Add a little sour cream for that trademark tangy cheesecake flavor.

Why is my cheesecake not creamy? ›

The fat content helps the cheesecake set and creates its signature creamy texture. If you've ever made cheesecake that was runny, it's very likely that low-fat ingredients are to blame. Full fat sour cream adds extra moisture and a tangy flavor to the cake.

Why isn't my cheesecake mixture thickening? ›

Increase the Amount of Cream Cheese: Adding more cream cheese to the filling can help thicken it. This will also enhance the richness and flavor of the cheesecake. Add Sour Cream: Incorporating sour cream into the filling can add thickness and tanginess. It also helps create a smooth and creamy texture.

Should I cover no bake cheesecake in the fridge? ›

Cover the cheesecake with plastic wrap or foil to prevent it from drying out or absorbing any odors from other foods in the fridge. If the cheesecake has a crust, store it separately from the filling to prevent it from becoming soggy. You can cover the crust with plastic wrap or foil as well.

Which is better bake or no bake cheesecake? ›

They both are great in their own way. It all narrows down to your personal preferences. If you enjoy dense and velvety cake, a baked cheesecake is the one for you. Or if you crave some light and airy dessert post-dinner, go for the no-bake one.

Can you eat Philadelphia no bake cheesecake filling? ›

Yes, Philadelphia makes a 24-ounce tub of pre-made cheesecake filling that you can use directly from the fridge—no baking necessary. The tub has everything you want from the sugary, sweet, cream cheese filling of a cheesecake, and it's ready to serve as-is.

Why is my no-bake cheesecake base too hard? ›

If you find that the crumb base is still too hard, then you could slightly reduce the amount of butter used, though we would advise caution on this as the base could become too crumbly instead.

How long does a no-bake cheesecake last? ›

How Long Does No-Bake Cheesecake Last. This cheesecake is the perfect dessert to make ahead of time because it stores so well. You can store any leftovers in the fridge for up to 5 days.

How long can a no-bake cheesecake sit out? ›

The USDA says to avoid the “danger zone” you must place a cooled cheesecake in the fridge within two hours. You can set a timer for yourself so you don't forget and risk wasting all that beautiful, rich dessert.

Will my no-bake cheesecake set in the freezer? ›

For a sturdy no-bake cheesecake with beautifully neat slices, refrigerate for at least 12 hours. This makes for a great make-ahead dessert! Do not freeze the cheesecake to set it. The filling won't slice and you'll lose the velvet texture!

Can you leave no-bake cheesecake out overnight? ›

Thus, cheesecake is perishable. Even if your recipe is traditional in that you bake your cheesecake (no-bake recipes don't contain eggs), once it has had a chance to cool outside the oven (about an hour), it must go back in the fridge.

Will cheesecake firm up in fridge? ›

Don't worry about it. The outside edge of your crust will look a bit soggy at first, but it will set up in the fridge overnight with none the wiser. Promise. Wrong pan size: If you only have a 10-inch pan and you want to make a recipe for a 9-inch cheesecake, it's fine to use the pan you have.

How long does it take a cheesecake to set in the fridge? ›

Leave to set in the fridge overnight. Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base.
