The flavors were good (I didn't need to season the gravy any more than the recipe called for), but the pork chops turned out tough. I think that searing them and then finishing them in the oven would work much better. I may try this again at some point - could be just a tough batch of pork chops.

I have made this recipe for many years, but it's been awhile since I have. We purchased a hog, and the chops are pretty thick, so I think I will have to put in the oven after frying to make sure they are not pink. One thing I have not used, is butter instead of oil, so that's the only difference in what I have done for so long. The gravy is always great with lots of pepper and salt to taste.

This was terrific. My pork could have been cooked a minute or two less, but that doesn't detract from the recipe. In fact, the gravy is easy, generous and delicious and can help a poor chop that may be a little dry!

What a great recipe! Have made it time and time again, always with great results. I tend to sear the meat and then put it in the oven at 350 degrees to finish cooking while I make the gravy and the potatoes. We usually double the recipe and triple the sauce, often adding extra thyme and marjoram. We serve with yukon gold mashed potatoes and steamed green beans. A great meal for a cold winter day. just the kind of old fashioned fare I crave during those cold winter months. Just read enfrijoladas's review from 4/10/13. Will have to try her additions next time!

This is a great, easy-to-use recipe! I like my pork chops smothered, so before I start the meat, I saute an onion and mushrooms in a non-stick pan until the onions are caramelized. I use one large onion, vertically sliced, and an 8-ounce tub of sliced mushrooms from the market. The onion pan serves to keep the chops warm while you make the gravy, then I combine everything into one pan at the end. It's really tasty!

Great recipe! I have made this recipe several times for my picky little ones and husband who WONT EAT pork ( figured too bad for him). The boys ate it all and quickly and hubbie went back for seconds.. hmmm. Easy to make, very tender meat and gobbled up by all! Great recipe!!!

My husband doesn't like pork chops usually, but I decided to try this one out because they sounded so much like my mom's recipe tweaked just a little even he liked them. I'm not a huge sage or thyme fan, so I went a little light on both those spices, which made the gravy great! I would definitely make this simple, tasty recipe again!

Pork is one of those meats that can easily dry out so since the kids are so picky, I bought a Rotisserie Chicken just in case this one didn't work out. The chicken is now for dinner tomorrow night because this recipe is OUTSTANDING! Easy, fast, juicy, and kid friendly! My only substitution was to throw in 4 fresh sage leaves on the pork while cooking instead of adding rubbed sage - my dry herb looked a little "old". I need to go back and lick the plate clean now!

I made this for dinner last night and it was DELICIOUS!!!! I meant to add mushrooms to the gravy just because I had some and I totally forgot. I was bummed....until I started eating the chops! It was amazing. I served it with mashed potatoes and the corn & asparagus steam fresh. I couldn't believe how quickly this meal came together. This was a big hit with my whole family, with or without the gravy. I used Olive Oil to fry the pork chops instead of butter. And my chops were boneless and were 1/2" thick rather than 3/4". I had to substitute the marjoram with oregano since I did not have marjoram. This one will be used regularly.

NOTE: I made this recipe AS IS and that is what my rating is based on. Really flavorful and easy. The whole family loves it. I make it all the time. Stick to the boneless chops. I tried bone-in once and it takes longer to cook and just does not work well with the gravy. The herbs make the difference, especially the marjoram. No substitutions.

a great tip posted by GAFoodLover on 1-31-11 about NOT using a cooking spray with silicon in it in a good non-stick pan. Thank you! I can add another tip... mustard! Yes, try adding 1-2 tablespoonfuls of a good quality dijon mustard to the gravy as you heat it up for an added kick. I also like to sautee some onion and add that to the gravy. I also can attest to the value of planning ahead if you have the chance and using an overnight brine for the 3/4 inch pork chops. Amazing what a brine will do to pork chops.

We liked this, but I felt like the gravy was a little too floury. Next time, we will try it with grilled pork chops and use less flour for the gravy. It is definitely on our "try again" list! I think that we possibly didn't use enough flour on the pork chops themselves and that worked against us. I used bone-in pork chops and added 1/4 teaspoon of black pepper to the flour. Absolutely fabulous. Raves from the family. Served along side garlic-mashed potatoes and roasted asparagus. Could easily sub hamburger patty for the chop for a chicken-fried steak flair. Definitely adding to our regular rotation.

WOW! I suck at making gravy and my husband and I LOVED this gravy! I only had pork chops with the bone and it still came out PERFECT!! So easy and fast, perfect for a weeknight but pretty enough for special occasions. I served this with Baby Yukon Gold Potatoes Jacques Pepin Style, Rachael Ray recipe. And Broccoli. I made this last night for the first time, and it was delicious. I followed some reviewers' advice and added extra of the spices and salt, but I don't think it needed. It was a little too salty. Everyone raved about it,though, so I'm planning to make it again next week exactly as written. I served it with Creamy Mashed Cauliflower from another site (Google search it, you'll love it). Just like mashed potatoes, only without the added fat and carbs.

I was very surprised that we didn't like this recipe after seeing all the five star reviews. It was like something you would get from bob evans. I admit that I do prefer really strong flavors which this did not have. The pork chop itself had no flavor at all. This one just didn't do it for us.

Good recipe and good ideas for reduced calories. I spotted one problem in preparation instructions - if you spray a good non-stick pan with a cooking spray, you may ruin the non-stick finish. Most cooking sprays use silicon, which does not react well to non-stick. A better approach is to put a few drops of cooking oil (preferably olive oil) in the pan and rub it around with a paper towel - or use an oil mister bottle instead of a pan-coating product - either one is way cheaper than cooking spray.

Having been born and raised in the south, making "milk" gravy comes second nature to me. If you'd like the gravy to have a bit more flavor instead of mixing the milk and flour together make a "roux" which is simply stirring the flour into the pan and letting it brown slightly before adding the milk. Depending on the depth of the brown, the gravy will take on a deeper, richer flavor. Stir constantly, don't take your eyes off it or you could burn the roux and when it's the color you like, quickly wisk in the milk. Season to taste. Using a half evaporated milk and half water mix for the milk makes it even tastier. (Not sweetened condensed milk..evaporated milk).

This dish is a part of our regular meal rotation. It is perfect when you need a little comfort on a weeknight. I prepare the recipe as it is written. The last time I made it, I mixed some heavy cream with 1% milk to make the gravy. This was a mistake. The gravy was just too thick. Using just 1% milk makes a nice textured gravy. Dinner can come together very quickly with this entree. Great with mashed potatoes and a green veggie of your choice.

Used thinner pork chops, and they came out excellent, but next time I will increase the amount of spices. The gravy was good, but bland. I made this recipe a couple of years ago and just brought it back into the rotation...and I'm glad I did. I used thin-cut pork chops which really cut down on the cooking time and they were still moist. The gravy thickened up very quickly and was delicious - even using skim milk. I love this recipe! The combination of spices in the gravy is so good and comforting. I have also used the recipe for chicken breast and thickly-sliced ham (for ham, don't put salt in the flour mixture, because the ham is already salty, but do add salt to the gravy).

I gave this recipe five stars because even though it is not fancy, it is very flavorful, quick to make and inexpensive. I used fat-free milk instead of 1% and cooked the gravy an extra minute or two to thicken. It was very good. I've made it twice now and even my picky four year old asked for more. I've made this twice, and gotten rave reviews from my family both times. I followed the directions exactly except that I increased the amount of salt and herbs for more flavor. It's hard to believe this is a light meal -- it tastes just like the high-fat gravy I used to make. I served it with rice (although mashed potatoes would have been good too) and broccoli for myself, peas for the rest of my family who won't eat broccoli, and homemade biscuits. Delish!

After inhaling the meat, my 4 year old said, "Try dipping the broccoli in the gravy!" That's a ringing endorsem*nt if I ever heard one. We will definitely make this again.

This turned out great. The gravy dosn't taste low fat at all. I added more herbs and salt for a touch more flavor, though. I also used pork tenderloin because that's what I had on hand. I'll definitely make this again.

Very good! Have a family of 3, so invited neighbor over for dinner (walking by with her pup). She couldn't believe how simple to cook and amazingly good it was. We all licked our plates :) Used the leftover gravy over our mashed red potatoes too.... YUM! Made exactly as indicated on the recipe.

Great classic I grew up with in Oklahoma. It was easy to put together and I will make this again. Personally, I add more salt and pepper to the gravy, generally speaking, this is how it's made. Enjoy!
