I’ll never forget the first time I had a Jim ‘N Nicks cheddar biscuit. It’s not that often that I can so easily recall where I was and what I was doing when I try a new food, so the fact that it made this sort of lasting impression on me is a true testament to how good their cheddar biscuits really are.

My husband took the day off of work to take me to our 4D ultrasound of our first child. Because that particular kind of ultrasound is optional, insurance doesn’t cover it. If you want one, you have to fork out a little money. My mother in law was gracious enough to pay for it so we could get that glamour shot of our little bundle of joy, and we were all over the moon for our appointment that day.

We make it to the appointment, and our baby made it very clear to us that she was in NO mood for photos. She’s still that way, honestly. The technician tried for quite some time to get her to move, but she just wasn’t budging. My heart hit my stomach when I realized that $200 was just spent to get a 4D picture of my child’s butt and left foot. There were no re-dos. I was a hormonal hot mess to say the least!

To try to remedy the situation, we stopped at a nearby Jim ‘N Nick’s BBQ Restaurant for a bite to eat to get our mind off of the photography fail. I had never been to a Jim ‘N Nick’s before, but I was ready to devour whatever food was put in front of me. Emotional eating at it’s finest!

Suddenly, an angel descended from heaven with a basket full of hot golden cheddar biscuits, and it was in that moment that I saw the light. I was a brand new woman!

All kidding aside, I remember having a moment sitting there in that booth where I looked at my husband and was like, “Honey, are you experiencing this euphoria? These have got to be the best biscuits I’ve ever tried in my entire life!” And I proceeded to eat them until I no longer had any room for the meal I had just ordered – and I wasn’t even sad about that.

Jim ‘N Nick’s knows their biscuits are good, too, because they sell the mix in-store and online for people to enjoy at home. 2 weekends ago we were eating once again at Jim N’ Nicks after a day at the zoo, and I was curious to see if anyone had tried to imitate the recipe online. There are quite a few “copycat” recipes, so I did a little digging and stumbled upon this one from Spicy Southern Kitchen. I was quite impressed with the outcome as sometimes copycat recipes don’t hit the mark. Personally, I think she came pretty darn close to nailing it! I did a very minor amount of tweaking to that recipe, and just like that – I had a batch of nearly identical Jim ‘N Nick’s cheddar biscuits!

Servings: 10 muffins

Ingredients

  • 1 1/2 cup all purpose flour
  • 2/3 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup buttermilk
  • 1 egg
  • 1/4 tsp vanilla-butter nut extract
  • 4 Tbs butter melted
  • 1 1/4 cup shredded cheddar cheese

Instructions

  • In a large bowl. combine dry ingredients except cheese

  • In a separate large bowl, combine wet ingredients and whisk until smooth

  • Pour wet ingredients into dry ingredients and stir by hand until well incorporated

  • Add in cheese

  • Refrigerate dough for 1 hour before baking

  • Preheat oven to 400 F

  • Generously spray regular sized muffin tins with a non-stick cooking spray

  • Fill each muffin tin all the way to the top and bake for 18-20 minutes

  • Allow to cool slightly, serve with butter and enjoy!

Because these biscuits are sweet, they’re perfect for breakfast or to serve alongside a meal like they do in the restaurant. With a little pad of butter on top, they are melt-in-your-mouth delicious. I’m currently wishing I had another batch of my homemade apple butter to serve on top. Have mercy!
