White Bean and Kale Minestrone Soup

White Bean and Kale Minestrone Soup Recipe (4)

Ingredients

  1. 2 tablespoons Canola Oil
  2. 1 cup frozen chopped vegetable blend for seasoning (onion, celery, bell pepper)
  3. 3/4 cup chopped carrots
  4. 2-1/2 cups water
  5. 1 can (14.5 oz each) Hunt's or other Petite Diced Tomatoes, undrained
  6. 1 can (15 oz each) Great Northern beans, drained
  7. 1-1/2 cups Tomato Sauce
  8. 2 cups frozen chopped kale
  9. 1/2 cup dry small pasta shells, uncooked
  10. Grated Parmesan Cheese, optional

Instructions

  1. 1.Heat oil in large saucepan over medium-high heat. Add vegetable blend and carrots; cook 3 to 5 minutes or until tender.
  2. 2. Add water, undrained tomatoes, beans and tomato sauce; stir to combine. Bring mixture to a boil.
  3. 3. Add kale and pasta; stir to combine. Reduce heat and simmer 15 minutes or until kale and pasta are tender, stirring occasionally.
  4. 4. Serve with Parmesan cheese, if desired.

Notes

  1. You may want to add zucchini for additional taste and crunch!
  2. Each serving adds about 5 grams of Fiber!

  11. This is a different version than I’m used to. I love a good minestrone soup. Have never had Kale though. I bought it for a salad, only to realize it’s not that great to eat raw! Thanks for sharing
